Scalawags Whitefish & Chips was founded by Brian Parker, a Michigan native,
in the summer of 1992.
Brian has more than 40 years of culinary experience. After 7 years of working with Marriot Resorts in Arizona, he returned home to northern Michigan to fulfill his dream of owning his own restaurant. After researching tourism trends in the area, he chose Mackinaw City to open the first Scalawags, a quick service casual dining establishment featuring the freshest whitefish, perch and walleye harvested from the Great Lakes. The restaurant is open May through October each year, and or 22 years now, families and groups have planned their vacations around eating at Scalawag's Whitefish and Chips.
